How to manage SharePoint site access requests

Situation

My Parents went away for a week’s vacation… (wait, that’s a Fresh Prince Song)

A user has access to SharePoint (is able to login somewhere, i.e. not being re-prompted for credentials) but does not have access to a particular list or library but does have a link (maybe via the Quick Launch or Top Link bar where it was statically entered). They are able to ‘Request Access’ to the site.

How to Set the Email Address for Access Requests to go to

Note: this is set on a site by site basis.
